CERVINAGO – PECORIELLO BIANCO
Made from 100% Pecorello grapes cultivated at 600 m a.s.l., this white wine is harvested manually and vinified with cold maceration and indigenous yeasts to preserve its purity. Aged 6 months in stainless steel and 2 months in bottle, it expresses a fresh fruity and floral profile, ideal with grilled fish and white meats. Best served at 8–10°C.

Training system: Spur-pruned cordon, single bud.

Manual harvest, skin maceration, and spontaneous fermentation with indigenous yeasts reveal the pure essence of the variety. Aged 12 months in lightly toasted French oak barriques and further refined in bottle, it offers a bold, aromatic profile with notes of red fruits, purple reflections, and excellent structure, making it suitable for aging. Perfect with red meats and aged cheeses.
